* Cinco de Mayo *

PEOPLE IN THE united States tend to equate Cinco de mayo with mexico’s independence day. However, mexico’s independence day is actually September 16. Cinco de mayo is the date of the 1862 mexican victory over the french in the Battle of Puebla. Over the years, Cinco de mayo has become a day of celebration in the united States even though it’s not considered to be a very big holiday in mexico.

Admittedly, i’m partial to Cinco de mayo. It is, hands down, my favorite holiday of the year. I have an annual Cinco de mayo party at my house filled with my favorite mexican foods and, of course, pitchers and pitchers of margaritas. I awake the morning of Cinco de mayo like a kid on Christmas day, ready to unwrap the culinary treats of mexico from morning to night. Over the years other latin-influenced dishes have crept into my repertoire for the occasion, but the sentiment i have for this day will never change. I simply love Cinco de mayo.
